1 15-ounce can black beans, rinsed and drained
1 15-ounce can black-eyed peas, rinsed and drained
1 10-ounce package frozen corn kernels, thawed
2 tomatoes, seeded and chopped
1 red bell pepper, chopped
½ cup chopped cilantro (or parsley)
6 green onions, thinly sliced (green parts too)
½ cup chunky salsa (mild, medium or hot, your choice)
1 to 2 tablespoons lime juice
1 tablespoons olive oil
1 teaspoon ground cumin
½ to 1 teaspoon salt
